Aztec Chicken

Ingredients
  

  • 4-10 Boneless Skinless Chicken Breasts
  • 2 cans Black Beans
  • 4 cups Frozen Corn
  • 2 Garlic Cloves, minced
  • 3/4 tsp Cumin
  • 1 jar Salsa
  • 8 oz Cream Cheese
  • Cheddar Cheese as needed
  • 2 cups White Rice

Instructions
 

  • Combine beans, corn, garlic, cumin, and 1/2 of the salsa in slow cooker.  
  • Add chicken and pour the remaining salsa on top.  
  • Cook on high 4-6 hours, or low 8-10 hours.  
  • After cooking, shred chicken and add the cream cheese and stir until melted.
  • Serve over rice and top with cheddar cheese.
